THANKSGIVING RAW-TERNATIVE ~ Cauliflower alternative to Mashed Potatoes
We're taking the Traditional Thanksgiving Feast to a whole new level by incorporating raw-ternatives. And I get it, there is something to be said about your "potatoes" having some "heat" to them - after all it usually is an acquired taste to enjoy eating cold mashed potatoes, especially when they are cauliflower. So we will call them raw-ternatives, even though they will not be dehydrated or at room temperature. ... Collective sigh of relief ...
Personally, my husband and I love preparing cauliflower steaks and potatoes - not exactly the conventional method of "meat & potatoes". I realize that you may not want to have a cauliflower steak for your Holiday meal, nor am I suggesting you give up the turkey. With that said, I am still going to give the entire recipe for the above, knowing that all of the cauliflower will be used for the potatoes. Our goal is to take this head of cauliflower and transform it into some mighty delicious mashed "potatoes". So here's the recipe:
Cauliflower Steak With Floret Mash
(use organic ingredients where possible)
1 head large purple cauliflower
1 14oz. can full fat coconut milk
1 ½ cups of water
2 tbsp coconut oil
Salt & pepper
Using a sharp heavy knife and starting at top center of cauliflower head, cut two 1-inch-thick slices of cauliflower, set aside.
Cut the remaining cauliflower into florets.
Combine florets, water, and coconut milk in medium saucepan and bring to a boil, simmer until tender approx. 10mins.
Strain the florets over a bowl, reserving liquid.
Transfer florets to a food processor and begin blending, slowly add cooking liquid, salt, pepper and coconut oil and puree until creamy and smooth, or desired consistency.
Transfer to serving bowl.
Heat coconut oil in a heavy large ovenproof skillet over medium-high heat.
Sprinkle steaks with salt and pepper.
Sear each side until golden brown about 2 minutes per side.
Pre-heat oven to 350°F (177°C) and place skillet in the oven, bake steaks until tender, about 10 minutes
We usually make a slight modification to this recipe and add Ghee (Clarified Butter) in the food processor. It is going to come down to your particular palette on the ingredients and measurements.
Experiment this weekend - play around and have fun with it. Remembering to add a little at a time until you get the right mix of coconut milk, water and salt.
(The highlighted steps 3-6 are all that you need to prepare the potatoes, unless you plan on preparing the Steaks.)
